Here's one of my favourite meat-free dishes. Tandoori cauliflower steaks. I'm not sure if it qualifies as a Thanksgiving meal.
Ingredients:
1 Cauliflower
2 tbsp smoked paprika
2 tbsp cumin
2 tbsp garlic powder
1.5 tbsp turmeric
1.5 tbsp salt
ΒΌ cup vegetable oil
Cilantro Sauce
1/3 cup vegetable oil
2 lemons (zest & juice)
2 tbsp vinegar
4 cloves garlic
1 green chilli
small bunch parsley
To serve
Cauliflower Rice (method below)
Pickled Red onion
Salad
Method:
Cut the cauliflower into two steaks (use the stalk as a base & save all the excess cauliflower to make cauliflower rice!)
Put the spices & vegetable oil into a bowl & mix them all round to make a marinade.
Cover the steaks in the marinade & bake them for 40 minutes at a very high temperature (220β (420β)
Put the cilantro pesto ingredients in a food processor & whizz them up into a sauce.
Make the cauliflower rice (blend the rice up into rice-sized pieces & then fry it with some finely chopped onions, salt & a tbsp of turmeric.
Take the steaks out of the oven & serve with the cauliflower rice, pickled red onion & salad.
Pour over the cilantro pesto
